The History of Recipes
It is possible to follow the history of meal recipes back into ancient history, certainly as far as the ancient Egyptians, and quite possibly further than that. In practice though, sadly, these old recipes were just primitive hieroglyphic recipes for preparing meals.
In fact, the oldest recipe found, according to Professor Solomon Katz, are a few tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Later, we have a couple of cookery books which date from the fourteenth century - a recipe book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, they are not about the spicy food that is popular today, but rather accounts of the types of meals enjoyed by the rich and powerful of that time. For the decades that followed, the rich families of the West competed to lay on the most exotic banquets, and as a result the best cooks and their recipes were highly sought after. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, verifying, and recording the recipes that were being prepared for the better households. By the time we get to the 20th century, cooking publications were highly popular mostly due to increased literacy, more leisure time and being a little richer. |
