The History of Recipes
Written recipes as an idea can be found back into distant history, in fact as far as ancient Egypt, and maybe further still. Interesting though that is, these, early cook books were just very simple hieroglyphic instructions for preparing food.
In an interesting twist, the most ancient recipe in existence, according to experts in ancient history are a few tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. During the time of the Romans a man called Apicius compiled a number of scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main course and afters, a style of dining still practiced today. Aspicius tells us how the ancient chefs were skilled in the use of a good variety of aromatic flavors, including some that we all recognise such as basil, fennel and parsley. Over the next few hundred years, the wealthy families of Wesstern Europe strove to lay on the most exotic meals, and as a consequence, the best cooks and their collection of recipes increased in prestige. However, it wasn`t until the nineteenth century that cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and recording the recipes that were being prepared for the better households. The arrival of TV brought us celebrity TV chefs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes such as those found on sites such as this. |
