The History of Recipes
It is quite feasible to trace the history of written cooking instructions far back into ancient history, certainly as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, in the main part, these ancient recipes were just basic pictorial instructions for preparing food.
Interestingly, the oldest recipe discovered so far, according to historians is a series of stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. As we move into The time of the romans 25BC a roman called Apicius compiled some scripts detailing recipes prepared by the Romans. In his scrolls, he recounts how the meals were divided into hors d`oeuvre, main meal and dessert, something we still use today. He also recounts how the ancient Romans used many herbs and spices, including some that we all recognise such as basil, fennel and asafoetida. During the next few hundred years, the rich and powerful families of the West competed to lay on the most extravagent banquests, and because of this cooks and their collection of recipes were much in demand. However, it wasn`t until the 19th century that haute cuisine and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collecting, verifying, and recording the recipes that were being prepared for the better households. Like it or not, the introduction of TV gave us TV cooks and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like the ones you can find on our site. |
