The History of Recipes
Recipes as a concept can be observed back into history, certainly as far into history as the Egypt of the Pharoahs, and maybe further still. However, in the main part, these ancient cook books were just very basic pictorial instructions for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to historians are some ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move into Roman times around 25BC a roman called Apicius assembled a collection of scripts detailing recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals were divided into appetizers, main meal and desserts, a very modern way of dining. Aspicius tells us how the Roman chefs made use of many aromatic flavours, including a few you will know like bay, rue and dill. Later, in the 15th century, knights returning from the crusades brought back many spices and herbs from the holy land, including spices such as coriander, parsley, basil and rosemary. The introduction of these new herbs and spices led to an eruption in books on cookery, most of which are kept safe in academic collections. Like it or not, the introduction of TV brings us TV cookery programs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
