4 mushrooms
2 onions
5 mange tout
220 g chick peas
400 g tomatoes with chili spices
1/2 tsp cinnamon
1 tbsp natural or hazelnut yoghurt
1 tbsp white wine vinegar
2 tsp brown mustard seeds
Directions
White grape juice is just as good as white wine if you
want to avoid the alcohol. The recipe works well
without either. Preparation: chop the onions into 2cm
pieces and finely dice the mushrooms.
Add all the vegetables to a casserole dish, then add
the spices, chickpeas, yoghurt and white wine. If
possible leave to marinate for a couple of hours to
let the vegetables absorb the taste. Microwave on high
(650w oven) for 15 minutes, or longer if you want the
vegetables to be soft rather than crunchy - say 20
minutes. Serve with Biryani rice - I use brown rice
with lentils, almonds, sultanas and a mixture of
vegetables such as carrots and broccoli.

The History of Recipes
It is quite possible to prove the history of written cooking instructions back into antiquity, certainly as far back into history as the Egyptians, and potentially, even further back. Interesting though that maybe, sadly, these ancient cookbooks were just basic hieroglyphic instructions for preparing food.
Later on, in The time of the romans around 25BC a man called Apicius assembled some documents detailing recipes enjoyed by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. Additionally, he recounts how the early Romans were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern cooks like bay, mint and dill. For the decades that followed, the powerful families of Europe competed to serve up the most extravagent banquests, and because of this cooks and their recipes were at a premium. Nevertheless, it wasn`t until the 19th century that haute cuisine and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the time we get to the 20th century, recipe publications were highly popular as a result of higher levels of literacy, people having more spare time and having more disposable income. |
