The History of Recipes
Recipes as a concept can be observed far back into history, at least as far into history as the Egyptians, and maybe further still. Interesting though that maybe, in the main part, these ancient records were just basic hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe in existence, according to Professor Solomon Katz, is a series of stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Closer to modern times, there were two interesting books which appeared in the fourteenth century : a cookery book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these books are nothing to do with the indian food that appears on menues today, but rather accounts of the types of food prepared by the chefs of the upper classes of the time. During the succeeding few centuries, the rich and powerful families of Wesstern Europe competed with each other to serve the most exotic meals, and as a result the best cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe publications really came of age. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to assembling, trying out, and publishing the recipes of their peers. By the arrival of the 1900s, cookery books were in high demand, mostly as a result of increased literacy, more leisure time and having more disposable income. Like it or not, the introduction of television brings us cooking programs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing everybody to search through massive numbers of recipes like those on sites such as the one you are reading now. |
