FOR THE CRUST
2 cup graham cracker crumbs
2 tbsp sugar
1/2 cup (1 stick) butter [melted
1 & cooled]
FOR THE FILLING
8 oz cream cheese [softened]
15 oz sweetened condensed milk
1/3 cup key lime juice
1/8 tsp lime oil (optional but good]
1 cup sour cream
Directions
To prepare the crust...
1) Combine all of the crust ingredients and
press into a 9" pie pan or spring form pan. Bake @
350o for about 20 min. or `til nicely golden brown,
then set aside to cool...
To make the filling...
2) In a medium size bowl, thoroughly mix
together the cream cheese and the milk, then blend in
the Key lime juice and lime oil (if used)...
3) Beat in the sour cream and mix `til smooth,
pour into the prepared crust and refrigerate for at
least 2 hours before serving...

The History of Recipes
Written cooking instructions as an idea can be tracked back into history, in fact as far back as ancient Egypt, and possibly even further than that. In practice though, mostly, these old recipes were just basic hieroglyphic instructions for food preparation.
Later on, in The time of the romans 25BC a man called Apicius compiled a few scripts showing how to cook the recipes cooked by his fellow Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into appetizers, main meal and afters, something that is very familiar to us today. This early Roman chef describes how the Romans made use of a good variety of spices and herbs, including some familiar names like thyme, rue and parsley. Later on, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from middle-east cuisine, such as coriander, parsley, and rosemary. The introduction of these new tastes led to an explosion in manuscripts on food, some of which are now in private collections. When we get to the 20th century, recipe publications are greatly in demand mostly due to higher levels of literacy, people having more spare time and having more money. |
