The History of Recipes
Written recipes as a concept can be tracked far back into ancient history, at least as far back as the early Egyptians, and possibly even further than that. Interesting though that is, generally, these early cook books were just primitive hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history is a series of tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Progressing into The time of the roman empire around 25BC a roman called Apicius compiled some scripts detailing recipes cooked by wealthy roman citizens. In his works, he recounts how the roman meals were split into starters, entrees and afters, a very modern way of dining. Additionally, he informs us how the cooks of Roman times used many different aromatic flavors, including a few that are still present in modern kitchens for example basil, fennel and asafoetida. As our culinary historical trip moves to more modern times there were two recipe books from the 14th Century - a book called `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they are nothing to do with the spicy food that we all know today, but rather accounts of the types of meals on the tables of the rich and powerful of that time. In the 15th century, people returning from the crusades brought us many foods, spices and herbs from middle-east cuisine, such as coriander, parsley, and basil. The introduction of these new culinary ideas was responsible for an outbreak in manuscripts on cookery, most of which are now in private cookery archives. Over the following few centuries, the rich and powerful families of the West competed to offer the best banquets, and because of this cooks and their recipes increased in prestige. However, it was during the 1800s that cooking and recipe books became really popular. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, trying out, and recording recipes of the day. By the arrival of the twentieth century, cookery books were in great demand, due to higher levels of literacy, people having more free time and a general increase in wealth. The introduction of television gave us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everybody to access thousands of recipes like those on sites such as this. |
