3 lb chicken
2 package italian salad dressing mix
3 tbsp flour
2 tsp salt
LEMON JUICE COATING
1 cup milk
1 1/2 cup pancake mix
1 tsp paprika
1/2 tsp sage
1/4 tsp pepper
Directions
Make a paste out of the marinade ingredients. Coat
chicken evenly. Stack chicken pieces in a bowl. Cover
and refrigerate overnight or at least for several
hours. Mix pancake mix with other seasonings. Dip
pieces of chicken in milk, then in pancake coating.
Dust off excess. Lightly brown in skillet with 1/2
inch vegetable oil in it. Brown for 4 minutes each
side. Remove and place in a single layer on shallow
baking pan. Seal with flour. Bake for 1 hour at 350^F.
Uncover and baste again with milk Return, uncovered,
to oven heated to 400^F, to crisp for 10 minutes.

The History of Recipes
Written recipes as an idea can be observed back into the distant past, certainly as far back into recorded history as ancient Egypt, and quite possibly further than that. Having said that, generally, these ancient cook books were just very simple hieroglyphic recipes for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to experts are some clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Much later, in Roman times a man called Apicius assembled some documents detailing recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals were split into appetizers, main course and desserts, something that is very familiar to us today. This early Roman chef tells us how the Roman cooks made use of many aromatic flavours, including a few that are still present in modern kitchens for example basil, fennel and dill. Continuing our culinary historical journey, there are a couple of recipe books which appeared in the fourteenth century : a recipe book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Perhaps surprisingly, these two books are not about the indian curry that appears on menues today, but instead accounts of the types of meals cooked for the nobility of that period. Later on, in the 15th century, the Crusaders brought back a variety of foods and herbs from middle-east cuisine, including basil and rosemary. The introduction of these new foods and spices led to a torrent in books on cookery, some of which are kept safe in private cookery archives. Over the succeeding few hundred years, the powerful families of Europe competed to serve the most exotic meals, and because of this the best cooks and their collection of recipes were highly sought after. Nevertheless, it was during the nineteenth century that fine cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, trying out, and recording the recipes of their peers. When we get to the twentieth century, recipe publications were highly popular mostly as a result of higher levels of literacy, people having increased free time and disposable income. The TV revolution brought us TV cooks and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, permitting us all to search through massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
