MARINADE
3 lb chicken
2 package italian salad drsg mix
3 tbsp flour
2 tsp salt
1/4 cup lemon jiuce
COATING
1 cup milk
1 1/2 cup pancake mix
1 tsp paprika
1/2 tsp sage
1/4 tsp pepper
Directions
Make a paste out of the marinade ingredients. Coat
chicken evenly. Stack chicken pieces in a bowl. Cover
and refrigerate overnight or at least for several
hours. Mix pancke mix with other seasonings. Dip
pieces of chicken in milk, then in pancake coating.
Dust off excess. Lightly brown in skillet with 1/2
inch vegetable oil in it. Brown for 4 minutes each
side. Remove and place in a single layer on shallow
baking pan. Seal with flour. Bake for 1 hour at 350^F.
Uncover and baste again with milk Return, uncovered,
to oven heatedto 400^F, to crisp for 10 minutes.

The History of Recipes
We are able to track the history of meal recipes way back into the distant past, certainly as far back as the Egyptians, and possibly even further than that. In practice though, mostly, these early recipes were just simple hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the oldest recipe found, according to historians are a few clay tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius wrote some documents detailing recipes enjoyed by his fellow Romans. In his publication, he recounts how the meals were divided into hors d`oeuvre, entrees and afters, something we still use today. Aspicius describes how the chefs of Roman times made use of many spices and herbs, including some familiar names for example bay, mint and asafoetida. As our culinary historical trip moves to more modern times we find two recipe books which appeared in the 1300s : a book titled `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these are nothing to do with the spicy food that is familiar to us all today, but rather accounts of the types of food on the tables of the upper classes of the period. In the 15th century, people returning from the crusades brought back a variety of foods and herbs from Arab cuisine, including spices such as coriander, parsley, basil and rosemary. These new foods and spices prompted a surge in manuscripts on cookery, most of which still exist in private cookery archives. By the arrival of the twentieth century, cook books are highly popular mostly as a result of higher levels of literacy, leisure time and a general increase in wealth. The introduction of television gave us TV cooks and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes like the ones you can find on this site. |
