The History of Recipes
We are able to track the history of meal recipes way back into distant history, in truth as far as pharonic Egypt, and maybe even further. However, generally, these old cook books were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to experts in ancient history is a collection of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a number of documents which described recipes prepared by wealthy roman citizens. In his publication, he recounts how the meals were divided into hors d`oeuvre, entrees and dessert, something we still use today. He also informs us how the cooks of his times were skilled in the use of a wide range of herbs, including a few that will be familiar to modern chefs like thyme, mint and parsley. During the following few hundred years, the upper-class families of the West tried to lay on the most extravagent banquests, and because of this chefs and their collection of recipes increased in prestige. Nevertheless, it wasn`t until the 1800s that fine cookery and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to assembling, verifying, and publishing recipes to help cooks of their time. By the advent of the 20th century, cookery publications were increasing in popularity as a result of higher levels of literacy, increased leisure time and a general increase in wealth. |
