The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into the far past, in truth as far back into history as the early Egyptians, and possibly even further than that. Interesting though that maybe, generally, these old cookbooks were just primitive pictorial recipes for food preparation.
Progressing into The time of the romans around 25BC a man called Apicius created a number of documents which described recipes enjoyed by wealthy roman citizens. In his scrolls, he describes how the roman meals were split into hors d`oeuvres, main course and afters, something we still use today. He also recounts how the Roman cooks were skilled in the use of a wide range of spices and herbs, including a few that are still present in modern kitchens such as basil, rue and dill. During the following few centuries, the rich families of Wesstern Europe tried to serve the most exotic banquets, and because of this cooks and their collection of recipes were at a premium. Even so, it wasn`t until the nineteenth century that cooking and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, testing, and recording popular recipes of the day. Like it or not, the introduction of TV brings us celebrity chefs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on this site. |
