The History of Recipes
We can track the history of meal recipes back into distant history, in fact as far as pharonic Egypt, and possibly even further than that. Interesting though that maybe, these, ancient recipes were just very simple hieroglyphic instructions for preparing food.
In fact, the most ancient recipe discovered so far, according to experts are a few ancient tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius compiled some documents showing how to cook the recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals were divided into appetizers, entrees and desserts, a very modern way of dining. Additionally, he tells us how the ancient chefs used a good variety of herbs and spices, including a few that will be familiar to modern cooks such as basil, mint and parsley. Later on in the 1400s, knights returning from the crusades brought us many new foods and spices from middle-east cuisine, such as coriander, basil and rosemary. The introduction of these new herbs and spices created a surge in books on cookery, most of which still exist in private collections. For the centuries that followed, the wealthy families of Europe strove to lay on the most extravagent banquests, and because of this cooks and their recipes became highly prized. Even so, it was during the 1800s that fine cooking and recipe books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collecting, verifying, and publishing recipes for their fellow cooks to enjoy. The introduction of the TV brought us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access thousands of recipes such as those found on our site. |
