The History of Recipes
It is quite possible to prove the history of recipes way back into history, in truth as far back as the Egyptians, and maybe even further. Having said that, generally, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
During Roman times 25BC a roman called Apicius compiled a few documents which described recipes cooked by wealthy roman citizens. In his scrolls, he recounts how the meals were split into hors d`oeuvre, main course and desserts, a very modern way of dining. He also recounts how the Roman cooks used a wide range of spices and herbs, including some that we all recognise such as bay, fennel and dill. During the succeeding few centuries, the rich and powerful families of Europe tried to offer the best banquets, and because of this chefs and their collection of recipes were at a premium. Nevertheless, it wasn`t until the nineteenth century that fine cooking and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, testing, and recording recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cookery publications are starting to become popular due to higher levels of literacy, increased leisure time and having more money to spend. |
