The History of Recipes
Experts have proved the existance of recipes way back into antiquity, in fact as far into history as the Egyptians, and potentially, even further back. Interesting though that is, generally, these early recipes were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to food historians is a series of tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. During the time of the Roman Empire a roman called Apicius compiled a few scripts showing how to cook the recipes cooked by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into hors d`oeuvres, main course and desserts, something that is very familiar to us today. Aspicius recounts how the chefs of Roman times were skilled in the use of a good variety of spices, including a few you will know for example bay, rue and parsley. Over the following few hundred years, the rich and powerful families of Wesstern Europe strove to offer the best banquets, and as a consequence, the best chefs and their collection of recipes could command a high salary. However, it wasn`t until the nineteenth century that cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, testing, and writing down the recipes of their peers. Like it or not, the introduction of television brings us TV chefs and the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes such as those found on this recipe site. |
