The History of Recipes
Historians have proved the existance of recipes back into distant history, at least as far back as pharonic Egypt, and potentially, even further back. However, generally, these ancient cook books were just basic hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to academics are some tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. As we move into Roman times 25BC a man called Apicius compiled a collection of documents describing recipes enjoyed by wealthy Romans. He tells us how the meals of wealthy Romans were divided into appetizers, main meal and desserts, a style of dining still practiced today. He also tells us how the cooks of Roman times used a wide range of aromatic flavors, including some that we all recognise like basil, fennel and dill. During the next few centuries, the powerful families of Europe competed with each other to serve up the most extravagent meals, and because of this chefs and their recipe collections were at a premium. Notwithstanding that, it was during the 19th century that fine cooking and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, trying out, and writing down recipes to help cooks of their time. By the advent of the 20th century, recipe publications were in high demand, mostly as a result of higher levels of literacy, leisure time and having more disposable income. The revolution that is television brought us cooking programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes just like those on sites such as this. |
