The History of Recipes
Written cooking instructions as an idea can be found far back into antiquity, at least as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that maybe, generally, these early records were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe discovered, according to experts in ancient history are a few tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. Moving our culinary historical trip onwards, we find a couple of interesting books dating from the 1300s - a book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these have no connection with the indian curry that is popular today, but instead accounts of the types of food prepared by the chefs of the nobility of those days. In the 15th century, people returning from the crusades brought back many foods, spices and herbs from the holy lands, including spices such as coriander, parsley, and rosemary. The introduction of these new culinary ideas prompted an explosion in books on cookery, many of which are kept safe in private cookery archives. Over the next few hundred years, the powerful and wealthy houses competed with each other to serve up the most exotic banquets, and consequentially chefs and their recipes increased in prestige. However, it wasn`t until the 19th century that fine cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, testing, and publishing recipes common in their social group. The arrival of TV gave us cooking programs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on this site. |
