The History of Recipes

Transcribed cooking instructions as an idea can be tracked far back into history, certainly as far back into recorded history as the Egyptians, and possibly even further than that. However, generally, these old cookbooks were just very basic hieroglyphic instructions for food preparation.

Fascinatingly, the oldest recipe discovered, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`.

As we move into The time of the roman empire around 25BC a roman called Apicius wrote a number of documents detailing recipes prepared by the Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the cooks of his times used a good variety of spices, including a few that will be familiar to modern cooks for example bay, rue and dill.

Moving our culinary historical trip onwards, we find a couple of cookery books from the 14th Century - a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these have no connection with the indian food that is served today, but rather recipes for the types of food prepared for the upper classes.

In the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from the holy lands, such as coriander, basil and rosemary. These new foods and spices prompted an outbreak in recipe publications, the majority of which are now in private collections.

Over the following few centuries, the powerful and rich houses competed to lay on the best banquets, and consequentially cooks and their recipes were highly sought after. Nevertheless, it wasn`t until the 1800s that haute cuisine and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, testing, and publishing recipes of the day.

When we get to the 1900s, cook books were highly popular due to better eduction, people having more spare time and being a little richer.

The arrival of TV gave us TV cooks and the spin-off recipe books.

Which pretty much brings us up to date and the invention of the internet, allowing everyone to search through thousands of recipes such as those found on this recipe site.
