The History of Recipes
Recipes as a concept can be traced far back into history, in fact as far back into recorded history as ancient Egypt, and maybe further still. However, in the main part, these early cook books were just very simple hieroglyphic instructions for meal preparation.
In an interesting twist, the most ancient recipe in existence, according to Professor Solomon Katz, are some tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. Progressing into Roman times 25BC a roman called Apicius wrote a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his publication, Apicius describes how the roman meals were divided into starters, main meal and desserts, something we still use today. Aspicius tells us how the Roman chefs used a wide range of aromatic flavours, including a few that are still present in modern kitchens for example bay, mint and asafoetida. Over the succeeding few hundred years, the powerful and rich houses strove to serve the most exotic meals, and as a consequence, the best cooks and their recipes were highly sought after. Nevertheless, it was during the 19th century that cookery and recipe books became really popular. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, verifying, and recording recipes for their fellow cooks to enjoy. The revolution that is television brought us TV cookery programs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to search through thousands of recipes like those on our web site. |
