The History of Recipes
It is quite feasible to follow the history of recipes far back into antiquity, in truth as far back into history as pharonic Egypt, and quite possibly further than that. In practice though, these, early cook books were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Progressing into Roman times around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals were separated into appetizers, main course and desserts, a very modern way of dining. He also tells us how the Roman cooks made use of many different spices and herbs, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida. Later on in the 1400s, knights returning from the crusades brought us many foods, spices and herbs from the holy lands, including basil and rosemary. The introduction of these new foods and spices created an increase in recipe books, the majority of which are now in private cookery archives. The introduction of the TV brought us cooking programs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes like those on this site. |
