The History of Recipes
It is quite possible to track the history of written cooking instructions far back into the distant past, in truth as far back into recorded history as the early Egyptians, and maybe further still. Having said that, in the main part, these early recipes were just basic pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe in existence, according to food historians are some tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Progressing into The time of the roman empire around 25BC a man called Apicius created some scripts which described recipes enjoyed by his fellow Romans. In his works, he recounts how the meals of wealthy Romans were split into appetizers, main meal and dessert, something that is very familiar to us today. Additionally, he tells us how the cooks of Roman times used many different spices and herbs, including a few that are still present in modern kitchens like bay, mint and asafoetida. Over the following few centuries, the upper-class families of Europe tried to serve up the best banquets, and as a consequence, the best chefs and their recipe collections were at a premium. Nevertheless, it was during the 19th century that haute cuisine and recipe publications rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, testing, and recording recipes that were common in the better off homes of the day. When we get to the 1900s, cooking books are increasing in popularity due to more people being able to read, people having increased free time and having more money to spend. The arrival of TV brings us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to access thousands of recipes like those on this recipe site. |
