1 lb lean ground lamb
2/3 cup soft bread crumbs
1/3 cup dry red wine or vegetable
1 broth
1/2 tsp salt
1/4 tsp dried rosemary, crushed
2 small cloves garlic, minced
KIWIFRUIT SAUCE
1 medium kiwifruit, peeled and
1 mashed
1 tbsp chopped fresh or 1/2 tsp.
1 dried mint leaves, crushed
2 tsp sugar
2 tsp lime juice
Directions
Prepare Kiwifruit Sauce by mixing all ingredients together in a small
bowl and set aside. Set oven control to broil. Spray broiler pan rack
with nonstick cooking spray. Mix remaining ingredients. Shape mixture
into 4 patties, each about 1 inch thick. Place patties on rack in
broiler pan. Broil with tops about 3 inches from heat 10 to 14
minutes for medium doneness, Turning once. Serve with sauce. 9 grams
fat per serving

The History of Recipes
Recipes as a concept can be tracked way back into ancient history, in truth as far back as the Egyptians, and possibly even further. However, these, early recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.

Progressing into Roman times around 25BC a roman called Apicius compiled a few documents showing how to cook the recipes enjoyed by the Romans. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvre, entrees and afters, a style of dining still practiced today. Additionally, he informs us how the cooks of Roman times used a good variety of aromatic flavors, including a few you will know like basil, fennel and parsley. For the next few years, the rich and powerful families of Europe strove to serve up the best banquets, and because of this cooks and their recipe collections were highly sought after. Nevertheless, it wasn`t until the 1800s that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes to help cooks of their time. By the advent of the twentieth century, cookery publications are greatly in demand due to higher levels of literacy, more free time and being a little richer. |
