1 olive oil
1/2 lb lamb cubes cut from leg 1/2 inch cu, bes
1 salt and pepper
1 tbsp flour
2 cl garlic, crushed
1/2 lb thin asparagus, wash and cut into 2 inch
1/2 cup fat free, low salt chicken broth
1 tbsp mint jelly
1 tbsp lemon juice
Directions
Spray a nonstick skillet just large enough to hold lamb cubes in one
layer. Brown lamb on medium high, 2 minutes. Salt and peppered
browned sides. Lower heat and add flour, garlic and asparagus. Toss
until flour is absorbed. Add chicken broth. Simmer 3 minutes,
scraping up any brown bits in the skillet. Add mint jelly and lemon
juice. Add salt and pepper to taste. Serve with potatoes.

The History of Recipes
We can read the history of written recipes far back into history, in truth as far as the ancient Egyptians, and possibly even further. However, mostly, these old cookbooks were just basic hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe discovered so far, according to experts in ancient history is a collection of tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Progressing into Roman times around 25BC a roman called Apicius wrote a number of documents which described recipes prepared by the Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. This early Roman chef describes how the Roman cooks used a good variety of aromatic flavours, including a few that are still present in modern kitchens like bay, fennel and asafoetida. Later on, we find two interesting cookery books which date from the 1300s ; a book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these are nothing to do with the indian curry that is popular today, but rather descriptions of the types of food served to the rich and wealthy people of that period. Later on in the 1400s, people returning from the crusades brought back many new spices and herbs from middle-east cuisine, such as rosemary and coriander. These new herbs and spices prompted a surge in books on cooking, many of which are now in academic collections. The introduction of the TV gave us celebrity chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to access thousands of recipes such as those found on our site. |
