The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions way back into the far past, in truth as far back into history as ancient Egypt, and quite possibly further than that. In practice though, mostly, these ancient recipes were just simple hieroglyphic instructions for preparing meals.
The truth of the matter is, the most ancient recipe found, according to academics is a collection of tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of scripts which described recipes enjoyed by the Romans. He describes how the meals were divided into hors d`oeuvres, main meal and dessert, a very modern way of dining. Aspicius recounts how the cooks of Roman times were skilled in the use of a wide range of herbs and spices, including a few you will know for example basil, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought back many new foods and herbs from the Middle-East, including coriander, basil and rosemary. The introduction of these new tastes caused an eruption in recipe manuscripts, the majority of which are kept safe in private libraries. During the following few centuries, the upper-class families of Wesstern Europe tried to serve up the most exotic meals, and as a result the best cooks and their recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to assembling, verifying, and publishing recipes common in their social group. By the advent of the 1900s, cooking books are increasing in popularity mostly as a result of increased literacy, people having increased free time and having more disposable income. Like it or not, the introduction of TV brings us celebrity chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, allowing everybody to access massive numbers of recipes just like those on our web site. |
