The History of Recipes
Recipes as a concept can be observed back into the distant past, in fact as far back into history as the early Egyptians, and maybe even further. Having said that, sadly, these old records were just simple pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to experts in ancient history are a few ancient tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. Progressing into The time of the roman empire around 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes enjoyed by the Romans. In his publication, Apicius tells us how the meals were separated into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the early Romans used a wide range of herbs, including a few you will know such as basil, mint and parsley. In the 15th century, the Crusaders brought back a variety of foods, spices and herbs from the East, including spices such as basil and coriander. These new spices and herbs prompted a surge in cookery books, the majority of which still exist in academic collections. Over the following few centuries, the powerful families of Wesstern Europe strove to serve up the most exotic banquets, and as a result chefs and their recipe collections increased in prestige. Even so, it wasn`t until the 1800s the formal cooking and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, verifying, and publishing recipes for their fellow cooks to enjoy. When we get to the 1900s, recipe publications were greatly in demand due to increased literacy, leisure time and a general increase in wealth. The revolution that is television brings us TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on this site. |
