The History of Recipes
It is quite possible to trace the history of recipes back into antiquity, at least as far back into history as the Egypt of the Pharoahs, and potentially, even further back. In practice though, sadly, these early records were just very basic hieroglyphic instructions for meal preparation.
During Roman times 25BC a man called Apicius compiled a collection of documents describing recipes prepared by wealthy roman citizens. In his scrolls, Apicius recounts how the meals were separated into starters, main course and dessert, something we still use today. Additionally, he describes how the ancient cooks used many different spices, including a few you will know like bay, rue and parsley. In the fifteenth century, the Crusaders brought back many foods and spices from the holy lands, including spices like coriander, parsley, and rosemary. These new culinary innovations led to an increase in recipe publications, many of which still exist in private libraries. Like it or not, the introduction of television brought us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to search through thousands of recipes like those on this web site. |
We hope you enjoy this Lasagna Maria recipe.
