The History of Recipes
Recipes as a concept can be found way back into ancient history, certainly as far back into recorded history as early Egypt, and potentially, even further back. Interesting though that is, mostly, these early recipes were just basic hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe discovered, according to food historians is a series of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Progressing into Roman times 25BC a man called Apicius compiled some scripts detailing recipes prepared by the Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, a style of dining still practiced today. This early Roman chef informs us how the ancient cooks were skilled in the use of a good variety of herbs, including some that we all recognise like thyme, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us a variety of foods and herbs from the holy lands, including spices like coriander, parsley, and rosemary. These new foods and tastes caused an increase in recipe manuscripts, many of which are now in private cookery archives. The TV revolution brought us TV cooks and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everyone to access massive numbers of recipes such as those found on the site you are now reading. |
