The History of Recipes
We are able to read the history of meal recipes back into antiquity, at least as far as the Egyptians, and potentially, even further back. Interesting though that is, mostly, these ancient records were just basic pictorial instructions for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to experts are a few clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. As we move into The time of the romans around 25BC a man called Apicius compiled a collection of documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, he describes how the meals of wealthy Romans were separated into starters, main meal and dessert, a style of dining still practiced today. Aspicius informs us how the cooks of his times used many herbs and spices, including some that we all recognise like basil, mint and parsley. During the next few centuries, the powerful families of Europe competed with each other to serve up the best banquets, and because of this the best chefs and their recipe collections became highly prized. However, it was during the 19th century that fine cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collating, verifying, and writing down recipes to help cooks of their time. By the advent of the 20th century, cooking books were in high demand, due to higher levels of literacy, people having increased leisure time and disposable income. |
