The History of Recipes

We are able to track the history of meal recipes back into distant history, at least as far as early Egypt, and maybe even further. Having said that, mostly, these ancient cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for meal preparation.

The truth of the matter is, the oldest recipe found, according to experts in ancient history is a series of stone tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful.

Later on, in The time of the roman empire around 25BC a man called Apicius compiled some documents describing recipes enjoyed by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were separated into starters, main meal and dessert, a very modern way of dining. This early Roman chef informs us how the cooks of Roman times made use of many different spices, including some familiar names like basil, fennel and dill.

During the following few hundred years, the wealthy families of Europe competed with each other to serve up the most extravagent meals, and as a result chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the 19th century that haute cuisine and cookery books became really popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collating, testing, and writing down recipes to help cooks of their time.

By the time we get to the 1900s, recipe books were in high demand, mostly as a result of increased literacy, leisure time and a general increase in wealth.
