10 large leeks (white only), washed well and cut in 1
4 eggs
3 tbsp bread crumbs
1/4 cup freshly grated parmesan cheese (opt, )
1 salt and freshly ground pepper
1/4 cup olive oil
Directions
Preheat oven to 350 degrees. Bring a large pot of salted water to a
boil.
Add leeks and cook for 10-15 minutes or until tender. Drain; when
cool, squeeze out excess water and set aside. Combine eggs, bread
crumbs and Parmesan cheese in a bowl. Stir in leeks and season to
taste with salt and pepper. Pout 2 tablespoons of the oil into an
8-inch baking pan and swirl to cover. Spread the leek mixture evenly
over the bottom. Sprinkle remaining olive oil on top. Bake for 20-30
minutes or until golden. Cut into squares.

The History of Recipes
Food historians have traced the existence of recipes back into antiquity, certainly as far into history as the Egypt of the Pharoahs, and maybe further still. Having said that, generally, these early cook books were just very simple hieroglyphic recipes for preparing food.
Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of scripts which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius tells us how the meals were separated into hors d`oeuvre, entrees and desserts, something we still use today. Additionally, he describes how the ancient Romans were skilled in the use of a good variety of spices and herbs, including many that are still in use today such as basil, fennel and dill. Later, in the 15th century, knights returning from the crusades brought back many new foods and spices from Arab countries, including spices such as basil and rosemary. These new herbs and spices prompted an outbreak in books on cooking, many of which are now in private collections. Like it or not, the introduction of TV brings us celebrity chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everyone to access thousands of recipes such as those found on this site. |
