The History of Recipes
We can follow the history of written recipes way back into history, certainly as far as early Egypt, and maybe even further. However, these, early cookbooks were just very simple hieroglyphic or cunieform instructions for preparing food.
Later on, in The time of the romans around 25BC a roman called Apicius compiled a collection of scripts detailing recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals were separated into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. This early Roman chef recounts how the early Romans were skilled in the use of a wide range of herbs, including a few that will be familiar to modern cooks for example bay, rue and parsley. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, including spices such as parsley, basil and rosemary. The introduction of these new foods and spices caused an eruption in recipe publications, some of which still exist in private libraries. By the time we get to the 20th century, cookery publications are highly popular mostly as a result of higher levels of literacy, increased leisure time and a general increase in wealth. |
