The History of Recipes
It is quite possible to follow the history of written cooking instructions far back into the far past, at least as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. Having said that, in the main part, these early records were just very basic hieroglyphic or cunieform recipes for preparing meals.
Later on, in The time of the romans around 25BC a roman called Apicius compiled some scripts showing how to cook the recipes cooked by wealthy roman citizens. In his works, he recounts how the roman meals were split into hors d`oeuvres, main meal and desserts, something we still use today. Aspicius recounts how the cooks of Roman times made use of many aromatic flavours, including a few you will know like basil, mint and dill. Later on in the 1400s, people returning from the crusades brought us a variety of foods and herbs from the East, including spices like parsley, basil and rosemary. The introduction of these new culinary ideas caused an eruption in books on cookery, most of which are now in private libraries. By the time we get to the 20th century, cookery books were greatly in demand mostly as a result of increased literacy, people having increased free time and having more money. |
