The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into the distant past, certainly as far as the Egypt of the Pharoahs, and possibly even further. In practice though, these, old recipes were just primitive pictorial recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to food historians are a few ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Progressing into The time of the romans around 25BC a man called Apicius assembled a number of documents detailing recipes prepared by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, a style of dining still practiced today. Additionally, he recounts how the ancient chefs were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs for example bay, fennel and dill. Moving on, there are a couple of cookery books published in the 1300s : a book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, these are unconnected to the indian food that is popular today, but rather accounts of the types of meals enjoyed by the rich people of that time. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from the holy land, such as parsley, basil and rosemary. The introduction of these new culinary ideas caused a torrent in recipe publications, many of which are now in private cookery archives. By the advent of the 1900s, recipe publications were highly popular as a result of better eduction, more free time and having more money to spend. |
