The History of Recipes
It is quite feasible to trace the history of recipes back into antiquity, certainly as far as the ancient Egyptians, and possibly even further. Having said that, these, ancient recipes were just primitive hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history is a collection of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. As we move into Roman times around 25BC a man called Apicius compiled a collection of documents detailing recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvres, main meal and afters, something that is very familiar to us today. This early Roman chef informs us how the ancient chefs were skilled in the use of a good variety of aromatic flavors, including some that we all recognise for example bay, rue and parsley. Moving on, there are a couple of cookery books which date from the 1300s ; a book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these books are unconnected to the curry that appears on menues today, but rather accounts of the types of food prepared for the rich people of the time. Later, in the 15th century, the Crusaders brought back a variety of spices and herbs from Arab cuisine, such as basil and coriander. These new culinary innovations created an eruption in manuscripts on cooking, some of which still exist in private libraries. The revolution that is television brought us TV cooks and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to access massive numbers of recipes such as those found on sites such as this. |
