The History of Recipes
Transcribed cooking instructions as a concept can be traced way back into the far past, in truth as far back into history as ancient Egypt, and potentially, even further back. Interesting though that maybe, in the main part, these old recipes were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to experts in ancient history is a collection of clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a few documents showing how to cook the recipes enjoyed by his fellow Romans. In his works, he describes how the roman meals were separated into hors d`oeuvre, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the Roman chefs made use of a good variety of herbs, including a few that will be familiar to modern chefs for example basil, rue and asafoetida. In the 15th century, the Crusaders brought back a variety of foods and herbs from the holy lands, including spices like parsley and basil. The introduction of these new culinary ideas prompted an eruption in cookery books, the majority of which still exist in private libraries. When we get to the 1900s, cooking books were greatly in demand mostly as a result of better eduction, people having increased spare time and a general increase in wealth. The arrival of TV brought us TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes such as those found on the site you are now reading. |
