The History of Recipes
Transcribed cooking instructions as an idea can be traced back into distant history, in fact as far back into history as early Egypt, and potentially, even further back. In practice though, sadly, these old cook books were just very simple hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered, according to experts is a series of ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. As we move into The time of the romans 25BC a roman called Apicius compiled a few documents describing recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. Additionally, he tells us how the chefs of Roman times made use of a good variety of spices and herbs, including a few that will be familiar to modern chefs such as bay, rue and asafoetida. During the next few hundred years, the rich and powerful families of Europe competed with each other to serve the most exotic banquets, and consequentially chefs and their recipe collections became highly prized. Nevertheless, it wasn`t until the 1800s that cookery and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, testing, and publishing popular recipes of the day. By the time we get to the twentieth century, cookery publications are in high demand, due to better eduction, increased leisure time and disposable income. Like it or not, the introduction of TV brings us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes such as those found on this site. |
