5 eggs
1 lb sugar
4 oz butter
Directions
(CEULED LEMWN) Scrub the lemons to clean them. Cut the lemons in half
and squeeze out the juice and strain. Grate the rind. Pour the juice
into a double saucepan. Beat the eggs and add to the juice with the
sugar and butter. Stir with a wooden spoon to dissolve the sugar.
Continue heating and stirring until the curd thickens. Put in
sterilised jars and cover.

The History of Recipes
Academics have tracked the existence of recipes way back into distant history, at least as far as the ancient Egyptians, and potentially, even further back. Interesting though that maybe, in the main part, these early cookbooks were just very basic pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe found, according to academics is a series of clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Progressing into The time of the romans 25BC a roman called Apicius assembled a number of documents describing recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main meal and dessert, a style of dining still practiced today. Aspicius also informs us how the early Romans were skilled in the use of many aromatic flavours, including a few that are still present in modern kitchens like bay, mint and asafoetida. In the 15th century, knights returning from the crusades brought back many spices and herbs from the East, including spices like coriander, parsley, basil and rosemary. These new herbs and spices caused a surge in books on cookery, many of which are now in private libraries. By the advent of the 1900s, cooking books were in high demand, as a result of better eduction, people having more spare time and a general increase in wealth. The revolution that is television brought us cooking programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes like those on the site you are now reading. |
