The History of Recipes

Academics have found proof that recipes existed back into history, at least as far as the ancient Egyptians, and possibly even further. In practice though, in the main part, these early records were just very simple pictorial instructions for meal preparation.

Interestingly, the most ancient recipe found, according to experts is a collection of tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful.

During Roman times around 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes enjoyed by the Romans. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvre, main meal and afters, something we still use today. Aspicius tells us how the ancient chefs were skilled in the use of many different spices, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida.

In the fifteenth century, the Crusaders brought back a variety of foods and herbs from the Middle-East, such as coriander, parsley, basil and rosemary. The introduction of these new foods and spices prompted an eruption in manuscripts on cookery, most of which are kept safe in private cookery archives.

During the succeeding few hundred years, the powerful families of Wesstern Europe strove to serve up the most exotic meals, and as a result cooks and their collection of recipes became highly prized. Nevertheless, it wasn`t until the 19th century the formal cooking and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, testing, and publishing recipes that were common in the better off homes of the day.

Like it or not, the introduction of television brought us TV chefs and the recipe books that accompanied them.

And that brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like those on this recipe site.
