The History of Recipes
Written cooking instructions as an idea can be traced way back into the distant past, at least as far into history as early Egypt, and possibly even further than that. Having said that, sadly, these early recipes were just basic pictorial instructions for preparing food.
In an interesting twist, the oldest recipe discovered so far, according to experts in ancient history are some ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. As we move into The time of the roman empire around 25BC a man called Apicius assembled a few documents detailing recipes cooked by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. This early Roman chef tells us how the Roman cooks made use of a good variety of herbs and spices, including some that we all recognise for example thyme, rue and asafoetida. Over the next few hundred years, the powerful families of the West competed to offer the most exotic meals, and because of this cooks and their collection of recipes increased in prestige. Nevertheless, it wasn`t until the 1800s that cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, verifying, and writing down recipes common in their social group. When we get to the 1900s, recipe books are in great demand, mostly as a result of higher levels of literacy, people having more free time and a general increase in wealth. |
