CRUST
1 1/2 cup cookie crumbs -- lemon
1/2 cup almonds -- finely chopped
6 tbsp butter
1/4 cup sugar
1/4 cup heavy cream
FILLING
1 cup powdered sugar
6 oz cream cheese -- softened
1/2 cup sour cream
1/2 cup whipped topping
3 1/2 oz box lemon pie filling
1 3/4 cup milk
1 tsp lemon juice
1 tsp lemon rind -- grated
TOPPING
2 cup whipped topping
1/4 cup lemon drop hard candies --
1 finely crushed
Directions
For crust: Mix cookie crumbs, ground almonds, butter, sugar and heavy
cream together. Pat in bottom and up sides of a nine-inch pie pan.
Bake at 300 degrees for
15 minutes. Set aside to cool.
For filling: Mix powdered sugar, softened cream cheese, sour cream and
whipped topping until smooth and creamy. Spread in bottom of cooled
crust. Mix lemon pudding and pie mix (according to package
directions), milk, lemon juice and grated lemon rind. Spread over
cream cheese layer in crust. Refrigerate for one hour.
For topping: Spread whipped topping over top of pie and sprinkle with
crushed lemon candies. Refrigerate.

The History of Recipes
Recipes as a concept can be observed far back into the far past, in fact as far back as pharonic Egypt, and quite possibly further than that. Having said that, in the main part, these early cook books were just simple pictorial instructions for food preparation.
In fact, the most ancient recipe found, according to experts is a series of tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. Later on, there are some interesting books which date from the fourteenth century - a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books are not about the spicy food that is popular today, but rather recipes for the types of meals eaten by the rich and powerful of those days. For the centuries that followed, the powerful families of the West strove to offer the most exotic meals, and as a result the best chefs and their recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe collections really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collecting, trying out, and writing down the recipes that were being prepared for the better households. By the advent of the twentieth century, recipe books are greatly in demand mostly due to increased literacy, people having increased free time and disposable income. |
