2 1/2 cup cake flour, sifted
2 tsp baking powder
1/4 tsp salt
1 tbsp lemon rind, grated
2/3 cup butter, or shortening
1 1/2 cup sugar
3 eggs, unbeaten
6 tbsp lemon juice
3 tbsp water
Directions
Sift flour once, measure, add baking powder and salt and sift.
together three times. Add lemon rind to butter. and cream thoroughly;
add sugar gradually and cream together until light and flfy. Add
eggs, one at a time beating thoroughly after each. Add flour,
alternately with combined lemon juice and water, a small amount at a
time beating after each addition until smooth. Bake in two greased
9-inch layer pans in moderate oven (375 degrees F.) 20 minutes, or
until done. Spread Luscious Lemon Frosting (see recipe) between
layers and on top and sides of cake.

The History of Recipes
It is quite feasible to prove the history of recipes far back into history, in fact as far as the ancient Egyptians, and maybe even further. Interesting though that maybe, sadly, these old cook books were just primitive hieroglyphic or cunieform recipes for food preparation.
During Roman times 25BC a roman called Apicius wrote a few documents showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were separated into starters, main meal and dessert, a very modern way of dining. Aspicius describes how the chefs of Roman times used many different herbs and spices, including some that we all recognise like basil, mint and asafoetida. During the succeeding few centuries, the powerful and wealthy strove to lay on the most exotic meals, and as a consequence, chefs and their collection of recipes became highly prized. Even so, it was during the 19th century that fine cookery and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to assembling, verifying, and writing down recipes to help cooks of their time. By the time we get to the twentieth century, cook books were starting to become popular mostly due to more people being able to read, leisure time and disposable income. |
