BASE
1 package lemon cake mix
1/4 cup margarine or butter, soften
3 eggs, separated (save whites
1 cup coconut
MERINGUE AND FILLING
3 reserved egg whites
1/2 cup sugar
1 can lemon pie filling
Directions
Heat the oven to 350~. In a large bowl, combine all base ingredients.
Mix at low speed until crumbly. Press in an ungreased 13X9 inch pan.
Bake at 350~ for 10 minutes. Meanwhile, to make the meringue beat egg
whites in a small bowl on medium speed until soft peaks form.
Gradually add sugar 1 tablespoon at a time, beating on high speed
until stiff glossy peaks form and sugar is dissolved. Remove base
from the oven and spread evenly with lemon pie filling; spread
meringue over the pie filling. Return to the oven and bake an
additional 15-25 minutes until the meringue is light golden brown.
Cool completely; cut into squares. Garnish as desired. 12 servings.

The History of Recipes
We can trace the history of written recipes way back into distant history, certainly as far back into history as the early Egyptians, and maybe even further. However, in the main part, these ancient recipes were just simple hieroglyphic recipes for preparing food.
In fact, the oldest recipe discovered so far, according to experts are a few tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Later on, there were a couple of recipe books from the 1300s : a recipe book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these two books are not about the curry that is popular today, but rather descriptions of the types of food on the menus of the wealthy. Later on in the 1400s, knights returning from the crusades brought back a variety of foods, spices and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new herbs and spices created a torrent in manuscripts on cooking, many of which still exist in academic collections. For the next few years, the upper-class families of Wesstern Europe competed to serve the best banquets, and because of this chefs and their collection of recipes became highly prized. Nevertheless, it was during the nineteenth century that cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and writing down recipes common in their social group. The introduction of the TV brings us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes such as those found on the site you are now reading. |
