2 tsp olive or vegetable oil
10 oz red potatoes, cut in 1/4
1 slices
1/2 cup canned ready to serve
1 reduced sodium chicken broth
1 tbsp lemon juice
1 tsp grated lemon peel
1 tsp chopped fresh parsley
1 garlic clove, minced
1/8 tsp pepper
Directions
In a 12-inch nonstick skillet heat oil; arrange potatoes in a single
layer in skillet and cook over medium-high heat until bottoms are
browned, 3 to 4 minutes. Turn potatoes over and cook until other
sides are browned, 3 to 4 minutes.
Add remaining ingredients to skillet and stir to combine. Reduce heat
to low, cover, and let cook until potatoes are tender, about 5
minutes. Serve warm or chilled.

The History of Recipes
Written cooking instructions as a concept can be traced far back into ancient history, at least as far as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these old records were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Later on, in The time of the romans around 25BC a roman called Apicius wrote some documents describing recipes enjoyed by his fellow Romans. In his works, he describes how the meals of wealthy Romans were divided into appetizers, main course and desserts, a style of dining still practiced today. Aspicius also describes how the Roman chefs used many herbs, including a few that will be familiar to modern cooks for example thyme, mint and dill. Later on in the 1400s, people returning from the crusades brought back many spices and herbs from the holy lands, such as parsley and basil. These new foods and tastes led to a torrent in cookery books, many of which are now in private cookery archives. By the time we get to the 20th century, cook books are in high demand, mostly due to better eduction, people having more free time and having more money to spend. |
