2 tsp olive or vegetable oil
10 oz red potatoes, cut in 1/4
1 slices
1/2 cup canned ready to serve
1 reduced sodium chicken broth
1 tbsp lemon juice
1 tsp grated lemon peel
1 tsp chopped fresh parsley
1 garlic clove, minced
1/8 tsp pepper
Directions
In a 12-inch nonstick skillet heat oil; arrange potatoes in a single
layer in skillet and cook over medium-high heat until bottoms are
browned, 3 to 4 minutes. Turn potatoes over and cook until other
sides are browned, 3 to 4 minutes.
Add remaining ingredients to skillet and stir to combine. Reduce heat
to low, cover, and let cook until potatoes are tender, about 5
minutes. Serve warm or chilled.

The History of Recipes
Transcribed cooking instructions as an idea can be traced way back into ancient history, at least as far into history as early Egypt, and maybe even further. Interesting though that is, in the main part, these early cook books were just very basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
During the time of the Romans a man called Apicius created a collection of scripts detailing recipes cooked by his fellow Romans. In his scrolls, he recounts how the meals were divided into appetizers, entrees and desserts, a very modern way of dining. This early Roman chef tells us how the early Romans were skilled in the use of many different herbs, including a few that are still present in modern kitchens such as bay, mint and dill. Over the next few hundred years, the rich families of Europe competed to offer the most extravagent meals, and consequentially chefs and their recipe collections were at a premium. However, it was during the 1800s that cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collating, verifying, and recording recipes for their fellow cooks to enjoy. The arrival of TV brought us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to access massive numbers of recipes like those on this web site. |
