The History of Recipes
It is possible to follow the history of written recipes back into the distant past, in truth as far into history as the early Egyptians, and quite possibly further than that. In practice though, mostly, these old recipes were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.

In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and dessert, a very modern way of dining. Additionally, he recounts how the Roman cooks used many spices, including a few you will know such as bay, mint and parsley. Later on, there were some interesting books which were published in the 14th Century ; a book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these books are nothing to do with the indian food that we all know today, but instead descriptions of the types of food prepared for the rich and powerful of the period. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from the Middle-East, including basil and coriander. The introduction of these new culinary ideas caused a surge in recipe manuscripts, the majority of which are kept safe in academic collections. For the next few years, the upper-class families of the West strove to offer the most extravagent meals, and as a result the best cooks and their recipe collections increased in prestige. However, it wasn`t until the 1800s that fine cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collating, testing, and publishing popular recipes of the day. By the advent of the twentieth century, cookery publications were greatly in demand as a result of increased literacy, people having more leisure time and a general increase in wealth. The introduction of the TV brings us TV chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on this web site. |
