The History of Recipes
Written recipes as a concept can be traced way back into distant history, in fact as far back as the Egyptians, and maybe even further. Having said that, mostly, these ancient cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Continuing our culinary historical journey, there were some interesting books from the 1300s ; a recipe book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Don`t be fooled by the titles though, these books are nothing to do with the spicy food that is familiar to us all today, but instead descriptions of the types of meals enjoyed by the rich people of the time. Over the succeeding few hundred years, the upper-class families of the West strove to offer the best banquets, and because of this chefs and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. When we get to the twentieth century, cookery publications were greatly in demand due to higher levels of literacy, increased leisure time and being a little richer. |
