1/4 cup lemon juice
3 tbsp chives, finely snipped or green oni, on tops
1 tbsp honey
1 tbsp basil, snipped or 1t dried
1 tbsp red wine vinegar
1 salt and pepper
Directions
Combine; let stand 30-60 mins for flavors to blend. Can be stored
refrigerated, up to 2 wks. Bring back to room temp before using.

The History of Recipes
Recipes as an idea can be observed way back into ancient history, certainly as far back into recorded history as the early Egyptians, and possibly even further. Having said that, sadly, these old recipes were just simple hieroglyphic recipes for meal preparation.
In an interesting twist, the oldest recipe discovered, according to food historians is a collection of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. As we move into The time of the roman empire around 25BC a man called Apicius compiled some scripts detailing recipes prepared by the Romans. In his works, Apicius tells us how the meals were divided into appetizers, entrees and desserts, something that is very familiar to us today. He also describes how the early Romans made use of a wide range of aromatic flavors, including many that are still in use today like thyme, rue and asafoetida. Over the next few hundred years, the rich families of Europe competed to lay on the most exotic banquets, and consequentially chefs and their recipe collections could command a high salary. Even so, it was during the 1800s that fine cooking and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, trying out, and recording recipes to help cooks of their time. When we get to the 1900s, recipe books were highly popular mostly due to better eduction, more spare time and having more money to spend. |
