The History of Recipes
Food historians have traced the existance of recipes far back into distant history, certainly as far back as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, in the main part, these early recipes were just primitive pictorial recipes for food preparation.
During Roman times around 25BC a roman called Apicius created some scripts describing recipes cooked by wealthy Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. This early Roman chef informs us how the Romans used a wide range of herbs and spices, including some familiar names for example basil, rue and dill. During the succeeding few hundred years, the powerful and rich competed with each other to serve the most extravagent banquests, and as a result the best cooks and their recipes could command a high salary. Notwithstanding that, it wasn`t until the 1800s that cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, verifying, and writing down recipes common in their social group. By the arrival of the 1900s, cookbooks are in high demand, as a result of increased literacy, more leisure time and having more money to spend. |
