The History of Recipes
Recipes as an idea can be found back into antiquity, in fact as far back into recorded history as ancient Egypt, and maybe even further. In practice though, sadly, these old cook books were just very simple pictorial instructions for preparing food.
Later on, in The time of the romans 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by his fellow Romans. In his publication, he tells us how the meals were divided into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the early Romans used many aromatic flavors, including some that we all recognise for example thyme, mint and asafoetida. Later on, in the 15th century, the Crusaders brought back many new spices and herbs from the Middle-East, including spices such as basil and coriander. The introduction of these new tastes created an outbreak in recipe publications, the majority of which are kept safe in private libraries. When we get to the 20th century, cooking books were starting to become popular mostly due to increased literacy, leisure time and being a little richer. |
