The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions way back into ancient history, at least as far back as the ancient Egyptians, and possibly even further than that. Having said that, these, old recipes were just very simple hieroglyphic recipes for meal preparation.
Progressing into The time of the romans around 25BC a man called Apicius compiled some documents detailing recipes cooked by wealthy Romans. In his publication, Apicius tells us how the roman meals were split into starters, entrees and desserts, something that is very familiar to us today. Additionally, he informs us how the Roman cooks were skilled in the use of a good variety of aromatic flavours, including some that we all recognise for example basil, rue and parsley. During the next few hundred years, the wealthy families of Europe competed to serve up the most exotic banquets, and consequentially cooks and their collection of recipes were greatly in demand. Notwithstanding that, it was during the 1800s that cookery and recipe publications became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collecting, trying out, and recording recipes of the day. By the advent of the 1900s, recipe books were in great demand, mostly due to better eduction, people having more free time and having more money. |
