2 1/2 cup water
1 cup lentils
2 large carrots, peeled, diced
1 bay leaf
1 can garbanzo beans (15-16 oz) - rinsed,, drained
1/2 basket cherry tomatoes - halved
1 cup chopped fresh parsley
5 green onions, chopped
4 1/2 tbsp olive oil
2 tbsp fresh lemon juice, plus...
1 tsp fresh lemon juice
Directions
Combine 2-1/2 cups water, lentils, diced carrots, and bay leaf in
heavy medium saucepan. Bring to boil. Reduce heat, cover and simmer
until lentils are just tender, about 25 minutes. Drain; transfer to
large bowl. Cool. Mix all remaining ingredients into lentils. Season
to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover
and refrigerate.)

The History of Recipes
It is quite feasible to track the history of written cooking instructions way back into antiquity, at least as far back into recorded history as early Egypt, and maybe even further. Interesting though that is, in the main part, these ancient cookbooks were just very basic pictorial recipes for preparing food.
As we move into Roman times around 25BC a roman called Apicius compiled a number of documents describing recipes prepared by the Romans. In his works, he describes how the meals of wealthy Romans were divided into appetizers, main meal and afters, something we still use today. This early Roman chef tells us how the Romans were skilled in the use of many aromatic flavours, including some familiar names like basil, fennel and dill. During the following few centuries, the rich and powerful families of Wesstern Europe competed with each other to offer the most extravagent meals, and because of this chefs and their collection of recipes were greatly in demand. However, it was during the 19th century that cooking and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collating, trying out, and writing down recipes to allow everyone to enjoy them. Like it or not, the introduction of TV brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on our site. |
