The History of Recipes
Academics have traced the existance of recipes far back into the distant past, in truth as far into history as pharonic Egypt, and possibly even further. Interesting though that maybe, generally, these old cook books were just simple hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the most ancient recipe in existence, according to academics is a series of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. During Roman times around 25BC a roman called Apicius created a few documents which described recipes cooked by wealthy Romans. In his scrolls, he describes how the roman meals were split into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. Aspicius describes how the cooks of his times made use of many spices, including many that are still in use today for example basil, mint and parsley. During the succeeding few hundred years, the upper classes tried to serve up the most extravagent meals, and as a consequence, cooks and their collection of recipes were at a premium. Even so, it wasn`t until the 1800s that cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and recording the recipes of their peers. By the arrival of the 20th century, cookery books are starting to become popular mostly as a result of more people being able to read, more free time and having more disposable income. |
